The success secret for just-right pralines: Double-check for soft-ball stage, using both a candy thermometer and the cold water test!

1. Combine 2 cups sugar and 3/4 teaspoon soda in a deep 3-quart saucepan; mix well with wooden spoon. Then add 1 cup light cream (or evaporated milk). Stir continuously while bringing to a boil over medium heat.

2. When mixture starts to boil, it may rise in the pan. Reduce heat and continue stirring until soft-ball is reached (234 F). Test with cold water several times to make sure candy forms a carmel like ball.

3. Remove from pan and add 1-1/2 tablespoons butter immediately. Measure accurately -- too much may keep pralines from setting. Add 2 cups pecan halves and stir.

4. You now have 30 seconds to get them spooned out onto waxed paper. Use a metal spoon. Makes 2 - 2-1/2 dozen patties.
